Forget 80/20 and just think about 2 intensity sessions per week and the rest longer zone 2 rides. Progress the volume and/or intensity each week and have an easier week once a month.

The value of zone 2 training is in allowing you to add volume safely. If try to do most of your volume in zone 3+, you risk overtraining and injury. If you only have 2-3 hours a week to work with, harder workouts (some kind of intervals) after a warmup, will deliver more bang for your buck in terms of fitness.
